Taylor's Cran-Broccoli Salad
My good friend Julia got me started experimenting with raw broccoli salad and it has become a favorite of mine. What with the cranberries, raisins, and seeds, it hardly seems like just broccoli....
- 2 cups finely chopped raw broccoli (use heads and soft parts of peeled stems)
- ¼ cup dried cranberries (soak in warm water for 30 minutes and chop)
- ¼ cup golden raisins (soak in warm water for 30 minutes and chop)
- ¼ cup sunflower seeds
- ¼ pecans, chopped
Place ingredients in a large bowl and mix well.
Add 4 ounces of Lemon Poppy Seed Dressing (non-fat, if available).
Mix well and rRefrigerate over night to blend flavors.
Place bowl on the table and serve with a large spoon.
