This can be a tasty way to get a variety of raw vegetables into one’s diet. Need to take something to the next potluck? Look no further.

Chop all vegetables in approximately ¼-inch squares or slices. 


  • 6 stalks of celery
  • 4 carrots
  • 2 red onions
  • 1 cup red cabbage
  • 1 cucumber
  • 1 zucchini squash
  • 1 can of black beans, drained and rinsed
  • 1 cup small croutons
  • Salt and pepper to taste

NOTE: You may add other vegetables, if desired, as long as they don’t quickly become too soft.

Combine ingredients in a bowl.

Add your choice of healthier vinagrette.

Mix together gently.
