Taylor's Tater-Mushroom Soup
This is an easy and tasty non-dairy soup.
Ingredients
- 2 cups water
- 3 potatoes peeled and cubed
- 3 onions diced
- 2 Tbsp mock-chicken seasoning
- 2 tsp salt
- Dash of pepper, if desired
- 1 Tbsp parsley
- 1 tsp garlic powder
- 1 lb sliced mushrooms
- 2 cups non-dairy milk
- 4 ounces of angel hair pasta
Preparation
Place 2 cups of water in a large kettle and bring to a boil. Add all ingredients except for pasta, mushrooms, and non-dairy milk.
Cook over medium heat until soft.
Place 1 lb diced mushrooms in a heated non-stick skillet (sprayed with coconut oil). Cook over a medium heat until soft and all liquid has been reabsorbed. Add to potatoes and onions.
Cook angel hair pasta and drain.
Add pasta, and non-dairy milk to potato-onion-mushroom mixture. Heat through but avoid boiling.
Serve
Ladle into bowls.
