This is a fun cookie that has no added butter. It does have butterscotch chips as one of the ingredients and, of course, Chinese noodles. One Sunday morning Sharlet was in the mood to cook, maybe because she had recently seen the movie Julie & Julia. Anyway, she was noodling around in the kitchen and came up with the prototype for these little desserts. They're fun for special occasions. There’s a down side, however. They don’t last long!

Ingredients

  • ¾ cup peanut butter (smooth or chunky)
  • One 11.5-oz package butterscotch chips or dark semi-sweet chocolate chips
  • ¼ cup raw chia seeds 
  • Two 8-oz packages chow mein noodles
  • ¼ cup finely chopped coconut, if desired
  • ¼ cup chopped nuts

Place peanut butter and chips in the top half of a double boiler.

Stir over boiling water until melted together.

Remove from heat.

Add chow mien noodles and other ingredients. Stir carefully until coated.

Place on waxed paper in small separate mounds. Allow to cool. May place in the refrigerator to hasten cooling, if desired.

Serve

Use as a dessert for special occasions.

Store in a plastic container—if there are any left to store!
