Taylor's Hip Apple Crisp
After fixing my own meals for several weeks post hip-replacement surgery—while using a walker, and the words simple and basic come to mind—Sharlet baked Apple Crisp for me one weekend. I cannot begin to describe how delicious it was! She claimed the taste was partly due to her using only Granny Smith apples. Whatever! It’s a winner!
Filling
6 Granny Smith apples. Peel, slice, and place in a large mixing bowl.
Add the following:
- 2 Tbsp lemon juice
- 1 tsp cinnamon
- ½ tsp nutmeg
- 2 Tbsp pure maple syrup
- ½ cup brown sugar, scant
- ¼ cup flour
- ¼ cup raisins, if desired
- Dash salt
Mix well. Pour into a greased 9- or 12-inch baking casserole dish. Set aside.
Topping
¼ cup apple juice and ¼ cup rice milk
Add the following:
- 1 cup oatmeal
- ½ cup flour
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ chopped pecans
- ¼ cup sugar
Mix well and then sprinkle over apples in casserole dish.
Place uncovered in preheated oven. Bake 45 minutes at 350 degrees F until topping is browned.
Serve warm or cold.
