Taylor's Meat Loaf/Meat Balls
This recipe can be used to make meat balls or a meat loaf. I often use the meat balls in pasta dishes, made with gravy to go with mashed potatoes, or as slices on an open-faced sandwich. T
Ingredients
- 1 cup non-dairy milk (almond, almond coconut)
- 1 small onion chopped fine
- 2 small carrots grated
- 1 cup cooked steel-cut oats
- 1 cup cooked brown rice
- ¼ cup nuts (e.g., pecans, walnuts) chopped fine
- 2 Tbsp egg substitute to help bind ingredients together or eggbeater equivalent
- 2 Tbsp chicken-like seasoning
- 2 garlic cloves minced
- 2 Tbsp parsley flakes
- 2 Tbsp chia seeds
- 1 tsp sage
- ¼ tsp marjoram
- ¼ tsp thyme
- ¼ tsp sage
- ¼ tsp Himalayan salt
- ¼ tsp ground pepper
Preparation
Combine all dry ingredients in a bowl and mix well.
Add all remaining ingredients and mix well.
Baking
Option #1: spray miniature muffin pans with coconut oil. Place mixture in each up and pat down until almost full.
Place in oven preheated to 350 degrees F and bake for about 30 minutes. Remove and cool on a rack. Remove 'meat balls' and use in recipes as desired.
Option #2: spray loaf pans or square cake pans with coconut oil. Place mixture in desired container and pat down.

Serving
Cut into squares (if used cake pans) and serve. Or slice from loaf pans and serve with gravy. Or place slices on bread for an open-faced sandwich.
