There are many ways to use unripe avocados. Here are examples.

Stuffed avocado

Halve the avocado, remove the seed, and stuff it (e.g., break a raw egg into each center, or put in some veggies or spicy black beans or quinoa. Put on a cookie sheet or in a shallow baking dish and place in oven preheated to 300o-350o F for 15-30 minutes (check with a toothpick until it has reached desired consistency).

For enchiladas

Halve the avocados, remove seeds, peel, and dice. Add it to any type of enchilada filling, roll in corn tortillas, cover with preferred sauce, and bake in oven preheated to 350o F for 30 minutes (or until sauce is bubbling and enchiladas are heated through). 

Replacement for dairy cheese

Halve the avocados, remove seeds, peel, and grate. Use the grated avocados in sandwiches, tossed salads, scrambled eggs, tacos or enchiladas, or sprinkled over blanquillos.

Grilled avocado

Halve the avocados, remove seeds, peel, and cut into thick wedges. Place wedges on a hot grill and cook until they reach desired consistency. Remove from grill, spray with lemon or lime juice and sprinkle with salt or your favorite seasoning.

Oven-fried avocado

Halve the avocados, remove seeds, and peel. Slice avocados into wedges and press each side into panko crumbs. Place on a cookie sheet sprayed with coconut oil and bake in oven preheated to 400o F until they reach desired color of golden brown and are soft.

Stir-fried avocado

Halve the avocado, remove seed, peel, and dice. Place in a wok or frying pan that has been sprayed with coconut oil. Add desired additional ingredients. When the avocado is soft, serve over a rice mixture (brown, black, red, white, etc.) or noodles (preferably non-wheat) or cooked quinoa.

In brownies

Halve the avocado, remove seed, peel, and cut into ½ inch cubes. Add to your favorite brownie recipe to add additional nutritional value.
