Do you enjoy fries but want to avoid eating fried foods? Well, my cousin Jim taught me how to make baked sweet potato crisps.

Ingredients

  • 8 medium-sized sweet potatoes
  • 1 Tbsp olive oil
  • ½ tsp sea salt
  • ¼ tsp paprika
  • ¼ - ½ tsp cinnamon, depending on desired taste
  • ¼ tsp pepper

Preparation

Peal sweet potatoes. Slice 1/8-inch thick using a veggie slicer or Cuisinart slicer or the equivalent.

Place sliced sweet potatoes in a large bowl. Add remaining ingredients and stir well to coat the slices.

Place tin foil on four large cookie sheets and spray with olive oil.

Place ¼ amount on each cookie sheet. Spread slices out.

Place in oven preheated to 425 degrees F.

Bake for 10 minutes. Remove from oven and turn over.

Return to oven for 10 minutes.

Check for desired crispness and bake longer if necessary.

Serving

Transfer crisps to a paper-towel-lined platter and serve warm.

Serves eight as a side dish.
