For those who love mashed potatoes but are trying to eat foods lower on the Glycemic Index, mashed sweet potatoes are great. They can be prepared with non-dairy cream cheese, for people who are leaning toward plant-based cuisine. It’s the chives that add color to the flavor. And speaking of color, the color of the mashed sweet potatoes themselves makes a visual treat for holiday dinners.

Ingredients

  • 6 medium sweet potatoes
  • 1 cup fresh chopped chives
  • 1 tsp sea salt or Himalayan salt
  • Pinch of nutmeg
  • ¼ tsp white pepper, if desired

Preparation

Scrub sweet potatoes well.

Place sweet potatoes on a cookie sheet, prick the top with a sharp knife, and bake in oven pre-heated to 350 degrees F. for 45-50 minutes until soft.

Remove from oven. Let stand for 5 minutes, then remove skins (cutting off ends or spots as needed) and place in a large bowl.

Using an old-fashioned potato masher or an electric masher, mash potatoes well.

Add chives and seasonings. Mash well.

Place in a greased casserole and return to oven pre-heated to 350 degrees F. for 30 minutes.

Serve

Remove from oven.

Serve and enjoy.
