Making sprouted lentil soup just got very easy since sprouted lentils are now sold in packages in several grocery chains. You can make it with regular lentils. However, sprouted lentils are touted as being richer in nutrients. I hope you enjoy it as much as I do.

Ingredients

  • 6 cups water
  • 1 cup sprouted lentils
  • 1 cup chopped onions
  • 1 cup thinly sliced carrots
  • ¼ cup mixed brown rice and quinoa, rinsed and drained
  • 2 Tbsp chicken-like seasoning
  • 1 Tbsp chia seeds
  • 1 tsp garlic, minced
  • ½ tsp sea salt
  • ¼ tsp turmeric
  • ¼ tsp pepper
  • 1 tsp coconut oil
  • 1 cup almond milk, or more to desired consistency

Preparation

Place all ingredients (except almond milk) in a saucepan. Bring to a boil, then turn heat to low and simmer until ingredients reach desired softness.

Add almond milk. When heated through, soup is ready to serve.

Serving

Ladle into soup bowls and enjoy. May top with croutons, if desired.
