Here is another way to use cauliflower.

Ingredients

  • 1 large cauliflower
  • 2 medium onions, diced
  • 2 medium potatoes, cubed
  • 1 Tbsp chicken-like seasoning
  • 2 tsps of your favorite mild curry powder
  • ½ tsp Himalayan salt
  • ½ cup raw cashews soaked overnight, washed, and blended with about 1½ cups almond milk to a smooth, creamy paste.

Preparation

Cut cauliflower into florets, using stem portions as well. Wash and put aside. Dicd onions and scrub or peel potatoes and dice.  

Place 2 cups of water in a large pan. Add all ingredients except cashew mixture. Bring to a boil 

Turn heat down and allow to simmer until potatoes and cauliflowers are soft. Use a blender to blend to a creamy consistency. Add the blended cashew mixture and stir well.  

If too thick, add more almond milk.  

Serving

Serve in warm bowls with your favorite sourdough bread, etc.
