I thoroughly enjoy green split-pea soup. It reminds me of my little French grandmother. While visiting in Brisbane, Australia, Susie made green pea soup that is a very close second. In fact, I liked it so much she made it twice! It’s very easy to make. Typically, I always have the ingredients on hand.

Ingredients

  • 2 packages frozen petite green peas
  • 1 cup of water
  • 1 cup almond milk, if desired
  • 1 tsp chicken-like seasoning
  • 2 cloves garlic or ½ tsp garlic powder
  • ½-1 tsp Italian seasoning
  • ½ tsp onion powder
  • ¼ tsp sea salt
  • ¼ tsp ground pepper to taste

Preparation

Place all ingredients (except for almond milk) into a large sauce pan. Bring to a boil, then reduce heat and cook for 5-10 minutes until peas are soft. Add a little more water, if needed.

Use an electric stick blender and blend until peas are smooth.

NOTE:  If you want a creamier soup, add 1 cup of almond milk and reheat until almost boiling.

Serving

Pour into bowls.

Serve with corn bread, toasted sourdough pieces, or baked crackers with guacamole or hummus.
