I have always loved peanut brittle but disliked the sugar and butter that most traditional recipes call for. My friend Flo let me taste some she made; and, while it still has oil and maple syrup, it’s still a much healthier alternative for “once in a while.”

  • 3 cup raw chopped peanuts
  • 1½ cup uncooked quinoa
  • 1½ cup old-fashioned rolled oats
  • 6 Tbsp coconut sugar
  • 6 Tbsp coconut oil
  • 1 cup maple syrup

Preparation

Preheat oven to 325 degrees F.

Mix dry ingredients together.

Heat oil and maple syrup together in a small pan until melted.

Add to dry ingredients and mix well.

Line two cookie sheets with parchment paper.

Divide the dough into two portions and spread each one on a cookie sheet as thinly as possible.

Bake 15 minutes.

Remove from oven and score with a rubber spatula.

Return to oven and bake an additional 15 minutes, watching carefully to make sure it does not burn.

Allow to cook.

Serving

When cool, break into pieces and serve.
