Taylor's Cran-Broccoli Salad PDF Print E-mail

My good friend Julia got me started experimenting with raw broccoli salad and it has become a favorite of mine.  What with the cranberries, raisins, and seeds, it doesn't seem like regular broccoli . . .

Ingredients:

  • 2 cups finely chopped raw broccoli (use heads and soft parts of peeled stems)
  • ¼ cup dried cranberries (soak in warm water for 30 minutes and chop)
  • ¼ cup golden raisins (soak in warm water for 30 minutes and chop)
  • ¼ cup sunflower seeds
  • ¼ pecans, chopped

Place ingredients in a large bowl and mix well.alt

Add 8 ounces of Lemon Poppy Seed Dressing (non fat, if available).

Mix well.

Refrigerate over night. Goes well with almost any entrée or soup.
