This is an absolute life-saver when company drops by unexpectedly and stays to dinner. Just keep some packages of brown rice angel hair (or the equivalent) in your cupboard and a package or two of frozen vegetables or petite green peas in your freezer—and you’ll be in business.

This recipe is for one person; just multiply amounts by the number of persons.

Ingredients

  • 1/2 cup water
  • 1 cup almond milk
  • 1/2 cup brown rice angel hair noodles, broken into 2-inch lengths
  • 1/2 cup finely chopped onion
  • 2 tsp chicken-like seasoning
  • 1/2 tsp garlic
  • 1/4 sea salt
  • Dash of pepper, if desired

Preparation

Pour ½ cup of water and 1 cup of almond milk into a sauce pan and heat to the boiling point.

Stir in chicken-like seasoning.

Add 1/2 cup of brown rice angel hair noodles. Reduce heat and allow to cook until soft.

Spray a small frying panwith coconut oil and place over medium heat. When you splash a drop of water in the pan, the water should sizzle and evaporate. Sauté onion with garlic and pepper until onions are caramelized.

Add 1 cup frozen vegetables or 1 cup frozen petite green peas. You may also add some braised tofu. Cook until vegetables are al dente.

Pour mixture from frying pan into the noodles.

You can vary the taste by adding ¼ tsp curry powder, or ¼ tsp cumin, or 1 tsp Italian herbs, or 1 tsp dried parsley flakes.

Simmer to taste, adding more almond milk, if needed, to obtain desired consistency.

Serve

Ladle into soup bowls or mugs.
