Taylor’s Original Humus 

I was asked to create a recipe for humus that could be made without salt or oil—that was still tasty. Yes, it can be done and it is quite good. Personally, I use 4 Tbsp avocado oil as it is smoother and that is not very much for about 30 ounces of humus. If you want to use sea salt and avocado oil, those amounts are included below. You can also use 1 can of Chick Peas and one can of small white beans for variety.

Ingredients 

  • 2 14 oz cans of Chick Peas (Garbanzos) rinsed and drained
  • 4 Tbsp lemon juice
  • 4 Tbsp avocado oil (or ½ cup water)
  • 3 Tbsp Tahini paste
  • 2 tsp minced garlic
  • 2 tsp turmeric powder
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1½ tsp NoSaltTM (or1 tsp sea salt)
  • ½ tsp pepper
  • ½ cup plus 2 Tbsp water

 Preparation

Place chick peas in a bowl and mash or chop until no whole chick peas remain.

Add all remaining ingredients except for Tahini paste and water. Stir well.

Add Tahini paste and water. Stir well.

If consistency seems too dense, add 1 or 2 additional Tbsp of water.

Place ½ of the mixture in a blender and blend for 1 minute on high. Open the blender and check consistency. You may need to add another 1-2 Tbsp hot water and blend again for 1 minute. Open the blender and check again. Blend again as needed to desired consistency and smoothness.

Repeat with the remainder of the mixture.

Serving 

Place a cup or two in a bowl and serve with crackers as an appetizer or hors d'oeuvre. Top with a few sliced black olives if desired. (I freeze remainder in ½ cup containers.)
